Job Description

Key Responsibilities:
• Oversee the efficient operation and management of the Pastry Shop, ensuring compliance with company policies on a daily basis.
• Ensure the production, quality, and presentation of pastries and desserts align with the daily menu requirements.
• Collaborate with the CDP Pastry to develop production forecasts and record leftovers, minimizing waste and maintaining food costs within acceptable levels.
• Assist in setting up pastry displays in various buffets.
• Maintain comprehensive knowledge of United States Public Health regulations and ensure adherence to these standards every day.
• Ensure the Pastry Shop is cleaned according to the schedule established by the Executive Pastry Chef, employing proper methods to prevent equipment damage.
• Guarantee that the pastry galley is ready for any announced or unannounced USPH inspections conducted by ship's management or USPH inspectors.
• Be responsible for requisitioning and transporting necessary items from main stores to the pastry shop as assigned.
• Verify that recipes and yields meet the company's standards.
• Support the CDP Pastry in completing the daily pastry consumption recap as requested by the Executive Chef.
• Aware of and/or acquire the necessary knowledge to comply with the ship's standard operations, assisting guests and crew members with inquiries.
• Attend meetings, training activities, courses, and other work-related activities as required.
• Perform related duties as needed. This position description does not imply or state that these are the only duties performed by the shipboard employee occupying this position.
• Shipboard employees will be required to perform any other job-related duties assigned by their supervisor or management.

Qualifications and Skills:
• Minimum three years of experience as a Pastry Cook in an upscale hotel, resort, cruise ship, or convention banqueting service (shipboard experience preferred).
• Knowledge of proper cleaning techniques, requirements, and use of equipment.
• High school diploma or basic education equivalency requirement.
